Duties

SOUS CHEF
Key Duties:
- Organizes and supervises all aspect of food production as well as the receipt, storage and control of food and related supplies.
- Supervises the work and training needs of between 16 -30 full time employees engaged in food preparations.
- Coordinates, adjusts and assigns work schedules to coincide with troop loads, catering requests and staff shortages. Manages leave requests. Assists with investigation and handling of staff conflicts.
- Assumes responsibility of other Sous Chefs in their absence, as well as replaces Chef de Parties, First Cooks, and Kitchen Assistants when required. Handles cash.
- Instructs and trains subordinates on proper methods and techniques within the food producution area. This would involve altering recipes and adjusting quantities based on requirements.

Intent of the process

This process will be used to staff an indeterminate full time position

Possession of a valid Red Seal Interprovincial Journeyperson Certificate as a Cook

Degree equivalency

Experience in supervision of multiple employees in a commercial or industrial kitchen setting such as a large volume institutional facility or a large hotel.

Experience in managing all aspects of food production/operation in a commercial or industrial
kitchen setting such as a large volume institutional facility or a large hotel.


Experience working with basic computer applications such as Internet or email or word processing software
