Duties

Although milk naturally contains antimicrobial systems, the role they play in the cheese ripening process remains largely underexplored. Your mission is to produce cheese in a pilot plant setting and evaluate the impact of antimicrobial systems on cheese production and ripening.

Come gain experience in cheese production with our master cheesemaker! At the same time, improve your knowledge of microbiological and physico-chemical analyses by using plate testing to evaluate the safety of the cheeses produced and conducting ELISA tests to quantify antimicrobial systems.

Work environment

The St-Hyacinthe Research and Development Centre (RDC) is one of Agriculture and Agri-Food Canada’s 20 research locations. Its mission is to advance knowledge of food quality, safety and processing through basic and applied research while supporting transfer to industry. The Centre employs approximately 125 staff (industry members, researchers, research assistants, graduate students and interns).

The candidate will participate in conducting research on Microbiology and dairy processing under the guidance of a laboratory assistant and the supervision of researcher Marie-Claude Gentès.

This dynamic researcher/assistant team are waiting to welcome you to our respectful and supportive environment. Our laboratory has all of the analysis equipment and human and material resources needed to ensure your work term is successful.

Education:

Food Science and Technology, Microbiology, Biotechnology, Food Chemistry.

Note: Students must be able to provide proof of currently being recognized as having full-time student status by the academic institution in which they are presently enrolled as well as proof they will be returning to full-time studies for their next academic term.

Degree equivalency

Experience:
Experience* in microbiological techniques.

*In the context of student recruitment in the Federal Public Service, the experience can be acquired through the studies, work experience, or volunteer activities.
