Under the supervision of Dr. S. Balamurugan, the candidate will conduct research to advance knowledge on 1) precise UV doses required for inactivation of different pathogens in milk that affects its safety and shelf-life; 2) effect of fat globules, casein micelles and others that determine milk optical properties, on UV-C absorption and inactivation of pathogens; 3) optimal UV-C exposure conditions, namely flow rate, retention time, etc. for efficient pathogen inactivation; and 4) biochemical and nutritional characterization of UV-C treated milk compared to raw (untreated) and thermal pasteurized milk.
The lab is located at The Guelph Research and Development Centre – Agriculture and Agri-Food Canada (Guelph, On). The work environment Includes a level II containment facility. Work will include handling infectious agents and hazardous materials. Appropriate training will be provided to create a safe work environment.

Currently enrolled or eligible to be enrolled in a M.Sc. program in Food Science (specializing in dairy microbiology) at the University of Guelph.
Experience in microbial techniques.
Experience in dairy product formulation.
