The PhD Student will be working in Swine Cluster project “Classifying Canadian pork based on quality attributes (1787)”. PhD courses to happen at the University of Guelph, co-supervised by collaborator Prof. Benjamin Bohrer. The work will include literature review, live animal handling in swine units, sample and data collection at commercial and research abattoirs and processing plants, lab analysis, data evaluation, preparation of scientific publications and presentations at conferences/meetings.
The student will collect data and samples from live pigs, carcasses and meat samples. The student will use a range of technologies for this task and will be properly trained in advanced. The student will analyze data and prepare reports, industry communications and scientific manuscripts.
The student will be working at the AAFC-Lacombe Research and Development Centre, as well as visiting commercial pork abattoirs and processing plant. The student will be exposed to live animals, abattoir and meat processing equipment and research lab environments, as well as performing office duties, such as writing manuscripts and reports and analyzing data.

Currently enrolled or willing to enroll in a PhD program at the University of Guelph with specialization in Food Science (Meats).
Experience in meat processing.
Experience in meat quality analysis.
Experience in data analysis.
Experience writing scientific manuscripts.
Experience presenting scientific results in scientific conferences.
